Okay, I love Christmas cookies. All of them – I don’t discriminate!
BUT – growing up, one of my favvvvorite holiday treats were always Magic Bars (sometimes referred to as Seven Layer bars). I honestly don’t know if these are traditionally a ‘holiday’ treat, but I only ever had them around the holidays, so that’s what I consider them lol.
But for this recipe – I didn’t make just any ‘ol magic bars. I gave them a little twist (by swapping out a few ingredients) and also added pumpkin! SO yummy. You guys are going to love these!

What you’ll need:
1 cup graham cracker crumbs
1 cup almond flour
5 tbsp butter, melted
1/2 cup coconut sugar
1 cup pumpkin puree
14 oz can full-fat coconut milk
1/4 cup maple syrup
1 tsp cinnamon
1/8 tsp nutmeg
1 cup unsweetened coconut flakes
1/2 cup chocolate chips
1/2 cups chopped nuts (I used walnuts)
Pinch salt
How to make ’em:
- Preheat oven to 350 degrees.
- Add coconut milk, maple syrup, and pinch of salt to saucepan on medium to low heat. Stir occasionally, and allow mixture to reduce to about half, or for about 25 minutes. Keep an eye on it so it doesn’t boil over.
- Put graham crackers in a plastic bag (I used 4 total), seal, and use a rolling pin to crush graham crackers into crumbs.
- Add graham cracker crumbs, almond flour, and melted butter to a bowl. Stir to combine.
- Add mixture to greased 9×9 pan, press down to form crust.
- Add pumpkin, coconut sugar, cinnamon, and nutmeg to a bowl, stir to combine.
- Pour pumpkin mixture on top of crust, and spread evenly.
- Sprinkle with coconut flakes.
- Pour coconut milk mixture evenly on top.
- Sprinkle chocolate chips & chopped nuts.
- Bake for 30 minutes.
- Remove from oven, allow to cool to room temperature, and then refrigerate – 30 minutes minimum, but overnight for best results.
- After refrigerating, using a sharp knife (this is very important or else they will crumble!!) carefully cut into bars.
- Serve!
*to make gluten free – simply sub graham crackers for a gluten free version
