Is there anything better than soup simmering on the stove when it’s cold outside? I am truly in my happy place when it’s a cozy afternoon with dinner already on the stove, diffusers going, and soft music playing (this playlist is currently on repeat in my house!). It doesn’t matter how wild my children are being lol if I’ve got these few things going, the vibe in our house is much more peaceful and calm. Add a hot cup of tea & a few spare moments to knit on the couch in peace to this scenario and I’m basically on cloud 9! Anyway, enough daydreaming from me.
I am so excited to share with you guys the recipe for my Sausage, Potato and Kale soup – it’s quickly becoming a favorite in our house! It’s hearty, rich in flavor, and filled with nutrient dense veggies and filling protein. Not to mention it’s perfect for those slower days when the weather is cold and you just want to curl up inside by a fire. For maximum deliciousness, I recommend pairing with a fresh loaf of sourdough bread.
Ingredients
- avocado oil
- 1 lb ground sausage or sausage links with casings removed
- 3 large carrots
- 3 stalks or celery
- 1 large onion
- 2 tbsp butter
- 4 garlic cloves, minced
- 3 tbsp flour
- 5 cups chicken broth
- 1 tsp dried basil
- 1 tsp dried oregano
- salt & pepper to taste
- 1 lb potatoes cut into 1 inch cubes
- 1 bunch of kale, roughly chopped
- 1 cup of heavy cream
- 2 cups of shredded cheese (I used mozzarella)
Instructions
- Add a little bit of avocado oil to a skillet
- Add the sausage and brown until cooked through. Set aside.
- While the sausage is cooking, dice carrots, celery and onion
- Add 2 tbsp butter into a hot dutch oven
- Add carrots, celery and onion to the dutch over and saute for 4 minutes until fragrant
- Add garlic and stir for one minute until fragrant
- Add flour to thicken
- Add chicken broth a little at a time and mix as you go
- Add in dried herbs, salt and pepper and stir to combine
- Dice potatoes into 1 inch cubes
- Bring soup to a boil and add potatoes
- Let simmer for about 40 minutes
- While soup is simmering, roughly chop kale
- Once potatoes are tender, add in the kale and mix until kale cooks down
- Add in heavy cream and cheese and stir
- Add in sausage and stir again
