Today’s recipe combines two of my favorite things – tacos and soup. I mean, who doesn’t love tacos?? We are big fans of taco night in this house, especially when made with my homemade einkorn tortillas. And in the winter time, we love soup. It’s hearty, warm, and easy to throw together for a home cooked meal. My super pregnant self also loves how simple this is to make, and doesn’t require lots of time on my feet in the kitchen! Plus it’s filled with nutrient dense, whole food ingredients, so alas – healthy taco soup.
What you’ll need:
2 tbsp avocado oil
2 large green peppers, diced
1 medium onion, diced
3 cloves garlic, minced
1 lb ground beef (grass feed preferred, we source ours from this local farm)
1 cup (fresh or frozen) corn
4 cups bone broth or chicken stock
28oz canned tomato sauce
1 tsp oregano
1 tsp cumin
1 tsp paprika
salt + pepper to taste
Optional toppings: shredded cheese, avocado, sour cream, fresh cilantro

Healthy Taco Soup Instructions:
- Dice green peppers, onions, and mince garlic.
- Add avocado oil, peppers, onion and garlic to soup pot or dutch oven, sauté on medium high heat until fragrant, about 2 minutes.
- Add in ground beef and cook until browned.
- Add bone broth, tomato sauce, and spices.
- Cover and simmer on low heat for at least 20 minutes, but the longer the better!
- Ladle into bowls, top with cheese, avocado, sour cream, cilantro, etc. Serve immediately.
