What are you up to this Halloween weekend?? Whatever it is, I’m sure these fluffy, gooey cookies will fit right in what whatever your plans are π
These little fall treats are so yummy – lightly sweet, chocolatey, and the perfect way to satisfy your sweet tooth. They definitely hit the spot.
What you’ll need:
1/2 cup pumpkin puree (not pumpkin pie filling)
2 tbsp honey
2 tbsp maple syrup
1 egg
1 tsp vanilla extract
1 cup whole wheat flour
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice
1 tsp baking soda
1/3 cup chocolate chunks (I like these ones)
1/2 cups mini chocolate chips (optional)
Pinch salt
How to make ’em:
- In a bowl, combine pumpkin puree, honey, maple syrup, egg, and vanilla (I used a whisk).
- In a separate bowl, combine flour, cinnamon, pumpkin pie spice, and baking soda.
- Add dry ingredients to the wet ingredients, and stir until just combined. Stir in mini chocolate chips (optional).
- Allow dough to chill in the fridge for 30 min-1 hour.
- Preheat oven to 350 degrees.
- Scoop out the cookie dough onto a lined cookie sheet (I used parchment paper).
- Press in the chocolate chunks.
- Bake for 8-10 minutes.
In my opinion, these cookies are best when they are warm right out of the oven, although they are still tasty after they’ve cooled! A note about the mini chocolate chips – I did not add these, however hindsight is 20/20 and these little guys would be even better with some more chocolate. If you’re a chocaholic like myself, go ahead and add the minis. If you just like a touch of chocolate, stick to the chunks only. Also, if you’d like to make these gluten free, oat flour is a good option (just make sure it’s certified gluten free). If you can’t find oat flour, you can just blend up oats in a blender! Just make sure to measure the 1 cup after blending, not before.
These are the perfect little light, sweet, chocolatey treat (and Matt approves, so that counts for something lol) hope you guys enjoy! If you do try them out, tag me on insta! π

I have been struggling with digestive issues for years + have been dieting for years and I just want to eat like a normal person. I’ve always been stubborn to kicking “unhealthy” things out of my diet because I don’t want to go crazy, but your channel (and now blog!) gives me hope that I can figure something out and still enjoy my food.

I just tried them but replaced the chocolate bits with chopped almonds and but pecan halves on top!
