I’m so excited to share with you guys how to make this healthy dutch baby recipe. Also referred to as a German pancake, it’s basically one giant pancake you bake in the oven. It’s been on repeat in our household this summer, we really can’t get enough! It is rich with eggs, einkorn flour, and skips out on the refined sugar most traditional recipes contain. I know you are going to love this!!

Let’s chat a little about what nutritional benefits there are in this healthy dutch baby recipe. First, it is heavier on the eggs than on the flour, unlike traditional pancakes. Which means it’s more protein rich which I really prefer for breakfast. A protein-rich meal in the morning can really help set you up for blood sugar stability throughout the day, versus a carb-rich breakfast which will cause a spike, then a dip, and this cycle could continue throughout the day. To learn more how this cycle works and how your blood sugar impacts how you feel, watch this video I did here. Eggs are also a rich source of Vitamin D, Vitamin A, selenium, B12, b6, iron, and zinc.
Next up, einkorn flour! I chose to sub in einkorn all-purpose flour into this healthy dutch baby recipe instead of traditional all purpose flour. If you’ve never heard me talk about einkorn before, it is actually an ancient grain and the only grain that has yet to be hybridized. Modern wheat is hybridized in order to increase crop yield and also increase disease resistance. For example, einkorn has only 14 chromosomes in its makeup versus 42 in standard wheat.
The manipulation of wheat in this way actually changes the gluten structure of the grain – many people find they can digest einkorn much more readily than standard, modern wheat. There is also a lower gluten content overall in einkorn flour, as well as higher protein. Lastly, einkorn flour has 3-4x more beta carotene, 2x more vitamin A, and 3-4x more lutein than modern wheat, which is what gives it a rich, yellow color!
Lastly, this recipe uses a decent amount of butter; I always make sure the butter I purchase comes from grass-fed cows, instead of cows that are fed grain. Grass-fed dairy and meat products have a more favorable fat profile – they are richer in omega-3 fatty acids, as well as higher in cholesterol neutral stearic acid, and lower in cholesterol elevating fatty acids such as myristic and palmitic acids. They also contain higher levels of Vitamin A and Vitamin E, as well as antioxidants. If you’re going to consume meat and dairy, try your best to source from grass-fed farms!

You will need:
Ingredients:
6 eggs
1 cup einkorn all-purpose flour (regular all-purpose works too)
1 cup milk
Pinch salt
1 tsp vanilla extract
1 tbsp maple syrup, plus more for drizzling
5 tbsp butter (grass-fed preferred)
Instructions:
- Preheat the oven to 425°.
- Preheat skillet on the stove to get it nice and hot. Add butter.
- While butter is melting, combine the rest of the ingredients together in a bowl. Whisk to combine (if the flour doesn’t incorporate perfectly, that’s okay)
- Pour mixture into the hot, buttered skillet.
- Bake in the oven for 25 minutes, or until crust is fully puffed up and golden brown.

- 1 cup einkorn all-purpose flour
- 1 cup milk
- Pinch salt
- 1 tsp vanilla extract

- 5 tbsp grass-fed butter
- 6 eggs
Instructions
- Preheat oven to 425°
- Preheat cast iron skillet. Once it's nice and hot, add butter.
- While the butter melts, combine remaining ingredients into a bowl, whisk to combine.
- Pour mixture into hot, buttered skillet.
- Bake for 25 minutes, or until crust is fully puffed up and golden brown.
