In this post, learn how to make easy cheeseburger soup from scratch – a perfect cozy, satisfying one pot meal.
Today, I’m talking about cheeseburger soup. Need I say more? My easy cheeseburger soup has it all – and by all, I mean meat, potatoes, and cheese. Cheeeeese. What more could you ask for? This one pot meal comes together quickly, is comforting and satisfying, yet not overly heavy. It’s great to throw together on a busy weeknight, or make ahead for fabulous leftovers throughout the week. Eat it on it’s own, or pair it with some fresh baked bread and a tossed salad if you really want to round it out and amp up the comfort factor.
Ingredients You Will Need
1 lb ground beef (grass fed preferred)
4 medium potatoes or 1 lb mini potatoes (red skin, russet, yukon gold, etc all work!)
1 head celery, approx 6 stalks
5 medium carrots
1 onion
3 cloves garlic
2 tbsp butter (grass fed preferred)
6 oz bone broth or stock
1 tsp oreagno
1 tsp parsley
salt + pepper to taste
shredded cheddar or mozzarella cheese
Easy Cheeseburger Soup Recipe
- Start by washing and chopping all of your produce. Chop the celery and carrots to equal size, and dice the onion and garlic. Throw all of this in your pot with some avocado oil and start sautéing.
- Once the mirepiox (aka onion, celery, and carrot mixture) becomes fragrant, add the ground beef to your pot and start cooking.
- While the beef browns, chop up your potatoes into equal size chunks.
- Once the beef is cooked, add in potatoes, broth, and spices. Cover and simmer for about 20 minutes, or until the potatoes are cooked through.
- Ladle hot soup into bowls, and top with a generous amount of cheese. (I love either shredded cheddar or mozzarella). Serve immediately, and enjoy that ooey gooey cheese!

Easy Cheeseburger Soup
Ingredients
- 1 lb ground beef
- 4 medium potatoes, diced
- 6 stalks celery, diced
- 5 medium carrots, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tbsp butter
- 6 oz bone broth or stock
- 1 tsp oregano
- 1 tsp parsley
- salt & pepper to taste
- shredded cheese, for sprinkling
Instructions
- Chop the celery and carrots to equal size. Dice onion, and mince garlic.
- Add butter, celery, carrots, onion, and garlic to pot on medium-high and sauté for a few minutes.
- Add ground beef to pot and continue sautéing.
- While beef is cooking, chop potatoes into equal size chunks. (Peeling is not necessary, but optional).
- Once the beef is cooked, add in potatoes, broth, and spices.
- Cover and simmer for about 20 minutes, or until potatoes cooked through and can easily be pierced with a fork.
- Ladle soup into bowls, top with generous amount of cheese. Serve immediately.
