Hi guys!
In today’s post, I’m going to be sharing three of my favorite cozy recipes that are perfect for the colder months! They are all packed with nutrients, filling, comforting, and the most important one – easy! Totally doable as weeknight meals, and they also make for great leftovers!
I will be listing the recipes below, and if you want to see them in action, check out the video below! I basically brought my camera along with me as I cooked these meals on three separate nights, in real time #reallife

Sweet Potato & Black Bean Stew
2 tbsp oil (I used avocado)
2 cloves garlic, minced
1/2 onion, diced
2 sweet potatoes, chopped
28oz diced tomatoes
15oz (1 can) black beans
1 tbsp tomato paste
2 cups chicken stock
1 tsp oregano
1 tsp turmeric
1/2 tsp smoked paprika
1/2 tsp chili flakes
4 handfuls spinach
Directions:
- Mince garlic & dice onion, add into dutch oven (or large pot) along with avocado oil over medium-high heat. Sautee until fragrant.
- Chop sweet potatoes into small cubes, add to dutch oven, mix with garlic & onions.
- Add tomatoes, black beans, tomato paste, chicken stock, and spices. Stir to combine.
- Add in spinach, stir until full incorporated.
- Place lid on, turn heat down to low, and let simmer for 20-25 mins.
Roasted Spaghetti Squash & Turkey Meat Sauce
1 spaghetti squash
2 tbsp oil (I used avocado)
Salt + Pepper
1 package organic ground turkey
Oregano, salt, pepper, garlic powder to taste
1 1/2 cups tomato basil sauce
Directions:
- Preheat oven to 400 degrees F.
- Slice spaghetti squash in half, lengthwise. Remove insides.
- Drizzle with oil, sprinkle on salt & pepper.
- On parchment paper (tin foil also works) turn squash face side down, and put in preheated oven.
- Bake for 45-50 minutes.
- When there are about 10 minutes remaining, add oil to heated pan.
- Add ground turkey and spices, and cook until cooked through.
- Heat sauce in saucepan (microwave also works).
- When spaghetti squash is done, remove from oven. Using a fork, break up squash to create “spaghetti.”
- Top with turkey, sauce, and parmesan, if desired.
Turkey & Bean Chili
2 cloves garlic, minced
1/2 onion, diced
1 green pepper, diced
2 tbsp oil (I used avocado)
1 package organic ground turkey
28oz diced tomatoes
6oz (1 can) tomato paste
15oz (1 can) chickpeas (or any beans!)
1 tbsp chili powder
1/2 tsp oregano
1 tsp cumin
salt + pepper to taste
Directions:
- Mince garlic & dice onion. Add to large pot along with oil, sautee over medium-high heat until fragrant.
- Add turkey, cook until cooked through, stirring and chopping occasionally.
- While turkey cooks, dice green pepper.
- When turkey is cooked through, add remaining ingredients, stir to combine.
- Place lid, turn heat down to low, and simmer for 25-30 minutes.
