Recently, I have become very interested in the idea of a “freezer pantry” and I have been trying to find ways to prepare delicious and nutrient dense homemade foods in advance. This Cinnamon Raisin Baked Oatmeal is such an easy breakfast to make and enjoy now or later.
Here’s how I make this flavorful Cinnamon Raisin Baked Oatmeal!
Cinnamon Raisin Baked Oatmeal Recipe
Ingredients:
2 eggs
1/2 cup maple syrup
2 tsp baking powder
1 1/2 tsp cinnamon
1 tsp salt
1/2 cup melted butter
1 cup milk
3 cups oatmeal
1/2 cup raisins
2 tbsp chia seeds
Instructions:
- Combine eggs, milk, melted butter and maple syrup
- Combine oats, baking powder, cinnamon, salt, chia seeds and raisins
- Add wet ingredients to dry ingredients and stir to combine
- Bake at 350° for 30-40 minutes

To make ahead:
This recipe is a good one to make ahead of time so you can just pull out and reheat when you need a healthy breakfast in a snap! There are a couple ways you can make this ahead of time, depending on how far in advance you want to make it:
- Make ahead the night before by following steps 1-3. Cover mixture with plastic wrap & refrigerate overnight. Bake the next morning uncovered until oatmeal is puffed up and the center is set, 40-45 min.
- Follow instructions as above, cool completely, and then freeze. You can slice into servings and freeze, or if you have the freezer space put the whole dish into the freezer, just cover with plastic wrap first. Pull it out the night before to thaw, and reheat at 350 °F for 10-15 min or until heated through.
