Here you will find the easy recipe for one of my favorite quick, weeknight meals – broccoli cheddar quinoa!
I’m so excited to share this broccoli cheddar quinoa recipe with you guys because it is a total winner. It’s extremely easy to throw together, packs its fair share of nutrients, and everyone loves it. This is my kind of meal!
All you need is quinoa, broccoli, cheese (I like a mix of cheddar + parmesan) a little garlic powder, salt + pepper. All of these ingredients are extremely easy to keep on hand (esp if you store some frozen broccoli in your freezer) so you can whip this up on a night you don’t feel like cooking, but still want a home cooked meal on the table.
Now I have to be honest…I’m not a very strict home chef and also not really a measuer-er, so the ingredient measurements below are approximate (except for the quinoa, that has to be exact to cook just right). But that’s kind of the fun of cooking – it doesn’t really have to be perfect and there is room to have fun with it.
Another note: I love using a pressure cooker to cook quinoa, for two reasons: quinoa can be finicky and it comes out perfect every time! But also, it cuts down on cooking time a LOT. Another time saver for this recipe – get frozen broccoli! Although I would recommend still steaming it on the stovetop (and not microwaving it in the plastic bag it usually comes in – if it’s a “steam” bag) as cooking it hot plastic is not the best.
Broccoli Cheddar Quinoa
Ingredients
- 1 1/2 cups Quinoa
- 2 cups Broccoli
- 3/4 cup Cheddar cheese
- 1/4 cup Parmesan cheese
- 1 tsp Garlic powder
- Salt + pepper to taste
- 2 1/4 cups water
Instructions
- If using a pressure cooker, add quinoa and water to insert pot. Place lid, close pressure release valve, and set to cook on HIGH for 1 minute. If not using a pressure cooker, following package instructions for stovetop cooking.
- While the quinoa cooks, wash & chop broccoli. Boil for 5 minutes.
- When quinoa is cooked, toss quinoa, broccoli, and remaining ingredients to combine. Serve immediately.
